The Peruvian dishes are prepared by their Peruvian chef; Malaysian by their Malaysian chef; and so on. Hence the traditional dishes are lovingly prepared by the right people who have inherited their skills and unique touches from their parents' and grandparents' recipes. Blue Cilantro in Cayman, the beautiful and much anticipated upscale offering from Chef Shetty, has recently opened its doors as the latest restaurant along the Seven Mile strip.  The cuisine is an infusion of French and Mediterranean, with a little bit Indian and Caribbean.  Chef Shetty firmly believes that using the best quality ingredients and only the best cuts of meat and fish, and freshest and most fragrant vegetables, herbs and spices to prepare his beloved delicacies, turning out succulent food bursting with flavor.  Chef Shetty says, a good chef should always have his heart in the kitchen.  His secret ingredient remains his reliance on the usage of seasonal produce, which he claims inspires his style of cooking.
